I'm jealous. You have a proper Wok. I have an electric stove and the wok doesn't work without gas flames licking the base! Looks quite yummy actually. No bamboo shoots or water chestnuts? The real secret is sesame oil . . just a dab.

Kelly - Yup. It's actually really easy. You get a string of dried chili peppers and soak until tender (usually overnight). Put the peppers and the water they soaked in in a blender and add lots and lots of minced garlic. Puree. If the paste gets too dry and thick, add vinegar (preferably rice vinegar) liberally. Puree until the paste reaches the consistency of tomato paste. And keep in mind when using this stuff that a little bit goes a long, long way!
